Pineapple Chicken Stew

Recipe

Ingredients:

  • 1 lb. Chicken (cut into chunks)
  • 8 oz. can Pineapple Chunks (drained; juice reserved)
  • 1 Red Bell Pepper (sliced)
  • 1 tbsp. Chopped Ginger
  • 1 tbsp. Brown Sugar
  • 1/2 tsp. Allspice
  • 1 tsp. Cayenne Pepper
  • 2 tbsp. Soy Sauce
  • 1/2 cup. Chicken Stock
  • 2 tbsp. Corn starch

Instructions:

  1. Add all ingredients other than reserved pineapple juice and corn starch to slow cooker.
  2. Cook on High for 4 hours, or Low for 8 hours.
  3. In a bowl, add corn starch to reserved pineapple juice. Mix well and add to slow cooker.
  4. Raise temperature to High and cook for an additional 15 minutes until thickened.
  5. Serve with rice.
