Apricot Meatballs

Recipe

Ingredients:

  • 2 Bell Peppers (diced)
  • 18 oz. Apricot Preserves
  • 1/2 cup Hoisin Sauce
  • 6 oz. Dried Apricots (chopped)
  • 1/2 tsp. Crushed Red Pepper Flakes
  • 1/2 cup Rice Wine Vinegar
  • 2 lb. Meatballs

Instructions:

  1. In a large pot, add bell peppers, preserves, apricots, red pepper, and vinegar and bring to a boil.
  2. Stir in meatballs, cover, and simmer on medium for 15 minutes.
  3. Serve over rice.
