Shakshuka
Another easy one-dish meal!
Recipe
Ingredients:
- 2 Large Red Bell Peppers (diced)
 - 1 Large Jalapeño (diced)
 - 4 cloves Minced Garlic
 - 1 tbsp. Paprika
 - 1 tsp. Ground Cumin
 - 1 tsp. Ground Coriander
 - 1/2 tsp. Cayenne Pepper
 - 28 oz. Crushed Tomatoes
 - 2 tsp. Sugar
 - 1 tsp. Salt
 - 1 cup Feta Cheese
 - 6 Large Eggs
 - Cilantro/Parsley for garnish.
 
Instructions:
- Preheat oven to 375º F.
 - On the stovetop, sauté peppers, garlic, and spices over medium heat until vegetables are softened.
 - Add tomatoes, sugar, and salt. Simmer on medium-low heat until the sauce has thickened.
 - Stir in feta cheese.
 - Crack the eggs directly into the dish, spacing them evenly for each portion.
 - Transfer the pan to the oven for 7 to 10 minutes or until the eggs have set to desired level of doneness.
