Swiss Cheese and Potato Casserole
- 8 Red Potatoes
- 1 cup Sour Cream
- 1 tsp. Dijon Mustard
- 2 tbsp. Parsley Flakes
- 1/2 tsp. Salt
- 6 Green Onions (chopped)
- 2 cups Shredded Swiss Cheese
- Preheat oven to 350º F.
- Place potatoes in a pot, add enough water to cover them, and boil for 20 minutes.
- Meanwhile, in a bowl, combine sour cream, mustard, parsley, and salt to make sauce.
- Cut potatoes in half.
- In a 2 quart casserole dish, layer as follows: half of potatoes, half of sour cream mixture, half of onions, and half of cheese. Repeat layers to finish ingredients.
- Bake for 45 minutes.
