Swiss Cheese and Potato Casserole

Recipe

Ingredients:

  • 8 Red Potatoes
  • 1 cup Sour Cream
  • 1 tsp. Dijon Mustard
  • 2 tbsp. Parsley Flakes
  • 1/2 tsp. Salt
  • 6 Green Onions (chopped)
  • 2 cups Shredded Swiss Cheese

Instructions:

  1. Preheat oven to 350º F.
  2. Place potatoes in a pot, add enough water to cover them, and boil for 20 minutes.
  3. Meanwhile, in a bowl, combine sour cream, mustard, parsley, and salt to make sauce.
  4. Cut potatoes in half.
  5. In a 2 quart casserole dish, layer as follows: half of potatoes, half of sour cream mixture, half of onions, and half of cheese. Repeat layers to finish ingredients.
  6. Bake for 45 minutes.
