- 2 Bell Peppers (diced)
- 18 oz. Apricot Preserves
- 1/2 cup Hoisin Sauce
- 6 oz. Dried Apricots (chopped)
- 1/2 tsp. Crushed Red Pepper Flakes
- 1/2 cup Rice Wine Vinegar
- 2 lb. Meatballs
- In a large pot, add bell peppers, preserves, apricots, red pepper, and vinegar and bring to a boil.
- Stir in meatballs, cover, and simmer on medium for 15 minutes.
- Serve over rice.
