Keto/Low Carb Bread

Recipe
Ingredients:
- 1 cup Vital Wheat Gluten
- 1/2 cup Oat Fiber
- 2/3 cup Flaxseed Meal or Psyllium Husk Powder
- 1/2 tsp. Xanthan Gum
- 1 tsp. Salt
- 1 tbsp. Erythritol or favorite sweetener (optional)
- 1/2 cup Warm Water
- 1/2 cup Heavy Cream
- 1 tsp. Honey
- 2 Eggs (lightly beaten)
- 1 tbsp. Instant Yeast
Instructions:
- Add ingredients to the bread machine following your machine’s instructions and baking procedure.
Notes:
*For my machine, I use the multi-grain option, along with the 2 lb. (or 1000g) option and set it to medium.
*If you wish to use the oven, after kneading the dough for 5 minutes in a stand mixer with a dough hook and then allowing the bread to proof in a warm place for 2 hours, bake at 350º F for 1 hour.
