Keto Pecan Pie Ice Cream
This ice cream is a smooth and delicious treat! You won’t notice that it is low-carb!
Recipe
Ingredients:
Pecan-Filling
- 4 tbsp. Butter
- 1 to 2 cups Chopped Pecans
- 1 tsp. Vanilla Extract
- 2 tbsp. Allulose
Ice Cream
- 3 cups Heavy Cream
- 1/2 cup Allulose
- 2 tsp. Pecan Extract
Instructions:
- Toast pecans by adding all pecan-filling ingredients to a pan on medium heat. Cook until the allulose has caramelized and the mixture is golden brown and set aside to cool slightly.
- Add all ice cream ingredients to a stand mixer with a whisk attachment. Blend on high speed until stiff peaks (whipped cream) form.
- Fold in pecan mixture.
- Freeze for 6 hours.
