Key Lime Cake
Key Lime pie meets cake!
Recipe
Ingredients:
Cake
- 2 cups All Purpose Flour
- 1 tsp. Baking Powder
- 1/2 tsp. Baking Soda
- 1/2 tsp. Salt
- 1 Stick (1/2 cup) Butter
- 1 1/2 cup Granulated Sugar
- 3 Eggs
- 1 cup Buttermilk
- Zest of 1 Lime
- Juice of 1/2 Lime (2 tbsp.)
- 1 tbsp. Lime Extract
- A few drops of Green Food Coloring (optional)
Frosting
- 1/2 Stick (1/4 cup) Butter
- 3 cups Confectioner’s Powdered Sugar
- Zest of 1 Lime
- 1/4 cup Lime Juice
Instructions:
Cake
- Preheat oven to 350º F.
- Cream together sugar and butter in a large bowl using a mixer at medium speed. Beat in eggs one at a time.
- In another bowl, whisk together dry ingredients.
- Rotate between beating in dry ingredients and buttermilk, starting with dry ingredients, until all is combined.
- Beat in lime zest, juice, extract, and food coloring.
- Split batter between two 8-inch cake pans that have been sprayed and floured.
- Bake at 350º F for 30 minutes or until a toothpick inserted in the center comes out clean.
- Cool in pans for 10 minutes, remove from pans, and completely cool cakes on wire rack.
Frosting
- Combine all ingredients with a whisk.
- Spread half of frosting on one cake, top with the other cake, and cover entire cake with frosting.
- Garnish with lime slices.
