Athenian Tilapia

A light, low-cal trip to Greece.

Recipe

Ingredients:

  • 4 Tilapia Filets
  • 2 tsp. Greek Seasoning
  • 10 oz. Frozen Spinach (thawed and dried)
  • 1 14.5 oz. can Petite Diced Tomatoes
  • 4 oz Feta Cheese

Instructions:

  1. In a baking dish sprayed with oil, season both sides of the filets with Greek seasoning.
  2. Bake at 350º for 5-6 minutes.
  3. Top each filet with spinach, tomatoes, and cheese.
  4. Return to oven for an additional 6 minutes.
  5. Serve with orzo, couscous, or rice.
