Coffee Muffins

Great muffins for a cup a coffee!

Recipe

Ingredients:

Cake

  • 1 1/2 cups All Purpose Flour
  • 2 tsp. Baking Powder
  • 1/4 tsp. Baking Soda
  • 1/4 tsp. Salt
  • 1 tsp. Cinnamon
  • 1 1/2 cups Granulated Sugar
  • 1/2 cup Brown Sugar
  • 2 Eggs
  • 1/3 cup Vegetable Oil
  • 3/4 cup Milk

Crumble Topping

  • 1 1/2 cups All Purpose Flour
  • 1/4 tsp. Salt
  • 1 tsp. Cinnamon
  • 1/3 cup Brown Sugar
  • 1/3 cup Granulated Sugar
  • 1 Stick (1/2 cup) Melted Butter

Glaze

  • 1/4 cup Confectioner’s Powered Sugar
  • 1 tsp. Milk

Instructions:

  1. Preheat oven to 375º F.
  2. In a large bowl, combine all cake ingredients.
  3. Pour batter evenly into a muffin tin.
  4. In a separate bowl, mix all topping ingredients.
  5. Sprinkle topping over batter.
  6. Bake at 375º F for 15-17 minutes or until a toothpick inserted in the center comes out clean.
  7. As the muffins cool, in a separate bowl, prepare glaze.
  8. Lightly drizzle glaze over muffins. Serve with coffee.
