Coffee Muffins
Great muffins for a cup a coffee!
Recipe
Ingredients:
Cake
- 1 1/2 cups All Purpose Flour
- 2 tsp. Baking Powder
- 1/4 tsp. Baking Soda
- 1/4 tsp. Salt
- 1 tsp. Cinnamon
- 1 1/2 cups Granulated Sugar
- 1/2 cup Brown Sugar
- 2 Eggs
- 1/3 cup Vegetable Oil
- 3/4 cup Milk
Crumble Topping
- 1 1/2 cups All Purpose Flour
- 1/4 tsp. Salt
- 1 tsp. Cinnamon
- 1/3 cup Brown Sugar
- 1/3 cup Granulated Sugar
- 1 Stick (1/2 cup) Melted Butter
Glaze
- 1/4 cup Confectioner’s Powered Sugar
- 1 tsp. Milk
Instructions:
- Preheat oven to 375º F.
- In a large bowl, combine all cake ingredients.
- Pour batter evenly into a muffin tin.
- In a separate bowl, mix all topping ingredients.
- Sprinkle topping over batter.
- Bake at 375º F for 15-17 minutes or until a toothpick inserted in the center comes out clean.
- As the muffins cool, in a separate bowl, prepare glaze.
- Lightly drizzle glaze over muffins. Serve with coffee.
